Instructions

  1. 1

Preheat your oven to 375°F (190°C).

  2. 2

Pat the fish fillets dry and season both sides with salt and pepper. Set aside.

  3. 3

In a large skillet, heat olive oil over medium heat. Add the onion and cook for 3-4 minutes until softened.

  4. 4

Add the garlic, red bell pepper, and yellow bell pepper. Sauté for another 5 minutes until slightly tender.

  5. 5

Stir in the diced tomatoes, olives, white wine, capers, Herbes de Provence, and lemon zest. Simmer for 5 minutes. Season with salt and pepper to taste.

  6. 6

Spread half of the tomato mixture in the bottom of a baking dish. Arrange the fish fillets on top. Cover the fish with the remaining tomato mixture.

  7. 7

Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes, until the fish is opaque and flakes easily.

  8. 8

Sprinkle with fresh parsley and serve hot, ideally with crusty bread or rice.
