Instructions

  1. 1

Soak rice noodles in warm water for 20-30 minutes or until softened. Drain and set aside.

  2. 2

In a small bowl, whisk together all sauce ingredients: fish sauce, soy sauce, tamarind paste, brown sugar, lime juice, and Sriracha.

  3. 3

Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink and just cooked through, 2-3 minutes. Remove and set aside.

  4. 4

Add remaining oil and garlic to the same skillet. Sauté until fragrant, about 30 seconds.

  5. 5

Push garlic to the side and pour in beaten eggs. Scramble until just set.

  6. 6

Add drained noodles and sauce to the skillet. Toss everything together and cook for 2-3 minutes until noodles are heated through and coated.

  7. 7

Return shrimp to the skillet, add bean sprouts and green onions. Toss gently to combine and heat through.

  8. 8

Transfer to plates. Top with chopped peanuts, fresh cilantro, and lime wedges. Serve immediately.
