Instructions

  1. 1

Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with 1 tablespoon olive oil.

  2. 2

Pat the shrimp dry and season with salt, pepper, and oregano.

  3. 3

Heat the remaining 1 tablespoon olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

  4. 4

Add the shrimp to the skillet and cook for 2-3 minutes, just until they begin to turn pink (they will finish cooking in the oven). Remove from heat.

  5. 5

Spread 1 cup of marinara sauce on the bottom of the prepared baking dish. Arrange the partially cooked shrimp evenly over the sauce.

  6. 6

Pour the remaining marinara sauce over the shrimp. Sprinkle with crushed red pepper flakes if using.

  7. 7

Top evenly with mozzarella cheese and half of the Parmesan cheese.

  8. 8

In a small bowl, mix the breadcrumbs with the remaining Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the casserole.

  9. 9

Bake uncovered for 18-20 minutes, or until the cheese is bubbly and the topping is golden brown.

  10. 10

Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
