From craving to table
Instructions
- 1
Boil the pasta in salted water according to package instructions until al dente. Drain and set aside, reserving 1/4 cup pasta water.
- 2
Heat vegetable oil in a large pan over medium-high heat. Add the pork pieces and season with salt and black pepper. Cook until browned on all sides, about 5-6 minutes. Transfer pork to a plate.
- 3
In the same pan, add chopped onions and sauté until golden brown, about 6-7 minutes.
- 4
Stir in the ginger-garlic paste and green chili, sauté for 1 minute until fragrant.
- 5
Add chopped tomatoes, cumin, coriander, turmeric, garam masala, and red chili powder. Cook until tomatoes break down and the mixture becomes thick, about 5 minutes.
- 6
Return the cooked pork to the pan and mix well with the masala. Cook for another 5 minutes, allowing flavors to meld.
- 7
Pour in the heavy cream or coconut milk, and simmer for 3 minutes. If the sauce is too thick, add a splash of reserved pasta water.
- 8
Add the cooked pasta to the pan and toss to coat evenly in the masala pork sauce.
- 9
Squeeze in lime juice and garnish with chopped cilantro.
- 10
Serve hot and enjoy!
